The pie may get its name because the sweet molasses odor attracts flies that must be "shooed" away. The shoofly pie's origins may come from the treacle tart with the primary difference being the use of molasses rather than golden syrup. Shoofly pie also comes in two different versions – wet bottom and dry bottom. The dry bottom version is baked until fully set and results in a more cake-like consistency throughout. The wet bottom version is set like cake at the top where it has mixed in with the crumbs, but the very bottom is a stickier, gooier custard-like consistency. http://en.wikipedia.org/wiki/Shoofly_pie

March 3, 2015 Thank you all for your comments on my potd yesterday of the moon & venus. I very much appreciate you guys! As some of you know, we just recently remodeled our house. We scraped all the popcorn texture off the ceilings (what a mess), put new texture on the ceilings (another mess), we painted every room in the house (14 different colors - all in similar color families), ripped up & threw away the old carpet & put all new hardwood floors in every room except the Kitchen, Living & Dining room as those floors are tile. Ripping the tile up, was not a job I wanted to tackle. Living in the house while all this was all going on was tough to say the least, but the outcome is great. I'm still unpacking and putting everything back in the house. It's going to take me several more weeks to finish putting the house back together again. During all of this, I cleaned out all the closets and have boxes and boxes of things and clothes to go to the Salvation Army and on eBay. My next job is to tackle the garage. Ugh - I'm thinking a break for a couple of weeks is in the my future. Anyway, early one morning just after the back bedroom was painted, I walked into the kitchen and I could see all the way to the back bedroom. I loved the shadow play on the walls from the early morning sun peeping through the plantation shutters and the sun's light on the yellow wall color of what is the Grandchildren's bedroom. I loved what the soft sun was doing with the shutters, and the new wall color, and I also liked that there was a hint of the Carolina Jasmine leafs on the trellis just outside making shadows at the edge of the window. This photo is by far not my best , but it was a scene that I saw in the early morning hours after the remodel. It really caught my eye, and it made me smile. Thank you for you comments and critiques! "When walking through the 'valley of shadows,' remember, a shadow is cast by a Light." ~ Austin O'Malley Have a "sun-shiney" day today my friends!
