This one won out because the lighting is probably stronger than the other.  But I was really undecided between the two!
The lighting was done with one light shining from behind and across the top of the bite, and another light shining from the side and across the bottom to light it below.  Increasing contrast meant that the black card it was resting on (to the right, since I actually rotated it in the frame by about 45 degrees), was not noticeable...
