It’s a very simple dish where Japanese eggplants are broiled, spread with a sweetened miso mixture, and then broiled again for a few seconds. The results are creamy, smoky eggplant with a sweet and salty sauce that will makes you want to just lick the sauce off the eggplant and then go put some more on, to lick off again!!
Japanese Eggplants are different from their more traditional cousins: They are long and slender, as opposed to shorter and squater. They are usually much less bitter since they have much fewer seeds, sometimes no seeds at all. They grill or broil up in minutes as the recipe above shows.
