Chunky Chicken Vegetable Soup
Mom and I were looking for a recipe for Chicken and Rice soup to make and share with our neighbors. This recipe over at Kraft Foods proved to be just what we were looking for, and it came out excellently. We used cauliflower, carrots, broccoli, and red pepper for the vegetables, doubled the recipe, and then added even more rice and broth, before topping it with cheddar cheese. Served with a panini-grilled cajun turkey sandwich and a cold glass of fresh apple cider.
