Stockfish from the Lofoten is regarded as the best. It is mainly exported to Italia, but also to other countries like Sweden, Croatia, Nigeria and USA. Stockfish was introduced to Italy during the 15th century, so there are many Italian recipes today using stockfish. In Scandinavia, it is mainly used in the lutefisk dish served during the holiday season.
